The season of soups is upon us and this is a good, fast, easy weekend lunch soup. Serve it with toast or whatever you like.
1 dessertspoon butter
1 medium onion, chopped
1 clove garlic, crushed
4 rashers bacon, chopped
2 1/ 2 cups (about 4 large) carrots, chopped or sliced
big handful chopped parsley
2 chicken stock cubes
pinch salt
dash Worcestershire sauce
shake black pepper
1 Tablespoon lemon juice
4 – 5 cups water
1 can tomatoes and herbs
Melt butter and sauté onion, garlic, and bacon for three or four minutes. Add everything else except the tomatoes, and simmer until carrots are cooked. Stir in the can of tomatoes and heat through.

I wonder what the size of the can of tomatoes would be, Donna? You think it's the usual size, not a large size? I think I'll make this recipe, since it sure looks tasty!
I think I would get both sizes, make up the soup and after you see how much it makes, decide which one to use. At least, that is what I would do. I thought it sounded good too. My husband hates cooked carrots...so I would be the only one enjoying it. Let me know how you like it and I will do the same.
that does look yummy; I have never had carrot soup; maybe I'll have hubby (the cook in the family LOL) make this sometime!! thanks Donna for posting Penny's recipe
